Here are some perfect recipes for any New Year's party from Nippers Beach Grille. They're located at 2309 Beach Boulevard in Jacksonville Beach.

Fried Green Tomatoes with Remoulade Sauce
Ingredients:
- 1 Green Tomato sliced into ½ inch thick slices
- 1 c. Buttermilk
- 3 Whole Eggs
- 1 tsp Ragin Cajun Spice
- 3 c. fine Cornmeal mixed with 1 tsp ea granulated garlic, dried parsley
- 1 Liter Vegetable Oil
Procedure:
- Heat Oil to 350 degree temperature in skillet or fryer.
- Combine buttermilk, eggs, and Ragin Cajun spice together and pour over Green Tomatoes and allow to soak for 20 minutes.
- Remove tomatoes and dredge in cornmeal mixture until well crusted.
- Place into fryer and cook until golden brown.
- Serve with Remoulade Sauce.
- Puree with hand blender until smooth.

Ahi Tuna Poke
Featured dish at Nippers Beach Grille for New Years Eve
Yields 2 servings
Ingredients:
- 8 oz. large diced Ahi Tuna
- 2 T. brunoise Cucumber
- 2 T. brunoise Red Onion
- 2 tsp. minced Ginger
- 2 T. chiffonade Cilantro
- 1 tsp. Paprika
- 2 T. Vegetable Oil
- 3 T. Guava Ponzu
- 1 tsp. Siracha Sauce
- Kosher Salt to taste
Procedure:
- Combine paprika, vegetable oil, siracha in a bowl and mix together.
- Add vegetables, cilantro and Ponzu.
- Fold in Tuna Gently.
Garnishes:
- Fried Wonton or Tortilla Chips
- Sliced Jalapeno Peppers
- Guava Aioli
- Picked Frisee

Guava Ponzu
Yields 1 pint
Ingredients:
- ½ c. Soy Sauce
- ¼ c. Rice Vinegar
- ¾ c. Guava Paste
- ¼ c. Water
- 1 tsp. minced Kaiffer Lime Leaves
- 1 tsp. minced Lemongrass
- 1 T. Ginger, minced
- 1 T. Sweet Chili Sauce
Procedure:
- Mix all ingredients together and mix well.

Guava Aioli
Yields 1 pint
Ingredients:
- 1 c. Mayonnaise
- 1 c. Guava Paste
- 1 tsp Chipotle Powder
- ½ tsp. Kosher Salt
- 3 T. Lime Juice
Procedure:
- Mix all ingredients together and mix well.
