Tomato Carpaccio Recipe and Cedar Plank-Roasted Salmon Recipe from Seasons 52. They are located at 5096 Big Island Drive.

Tomato Carpaccio

Ingredients:

4 medium vineripe tomatoes
2 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
½ cup crumbled goat cheese
Big pinch basil leaves, thinly sliced
8 pieces bruschetta
¼ cup balsamic glaze
Black pepper to taste


Procedure:
•    Prepare four small plates each with a drizzle of 1 teaspoon olive oil and 1 teaspoon balsamic vinegar.
•    Slice each tomato approximately 1/8" thin.  Lay tomato slices over oil and vinegar in single layer, slightly overlapping.  Sprinkle 2 tablespoons goat cheese per plate over tomato slices.  Place thinly sliced basil leaves evenly over each plate.  Garnish with a zig-zag of balsamic glaze from a fine-tipped squeeze bottle.  Finish with fresh ground black pepper.
•    Serve with 2 pieces freshly grilled or toasted bruschetta slices

For Bruschetta:
1 loaf rustic ciabatta bread
2 tablespoons extra virgin olive oil
Salt and black pepper to taste

Slice rustic ciabatta loaf in ½" thick pieces.  Brush both sides with olive oil and season with salt and pepper.  Bread can be grilled or toasted.

Serves:  4

Cedar Plank-Roasted Salmon

NOTES:
•    Select premium salmon filets-preferably wild or organic
•    Cedar planks - available at gourmet grocery stores
•    Soak cedar planks overnight in water


Ingredients for Marinade:
4 fresh salmon filets (6 to 8 ounces per piece, boneless, skinless)
2 tablespoons Dijon mustard
1 teaspoon malt vinegar
1 teaspoon soy sauce
1 lemon, zest and juice
1 tablespoon extra virgin olive oil (plus some for planks)
Combine ingredients above and lemon zest in a small glass dish
Coat salmon filets with marinade and allow to marinate for one hour

Sea salt and fresh ground black pepper to taste


Procedure:

•    Pre-heat oven to 475°F.
•    Remove cedar planks from soaking water.  Rub cedar planks with extra virgin olive oil.  Place salmon filets on cedar planks and season with sea salt and fresh ground pepper.  Roast salmon 8-10 minutes (depending on size of filets).  Serve with lemon and your favorite side dishes.
