Healthy Back-to-School Lunch Recipes

Sunny  Mediterranean Couscous Salad
Ingredients:
1 box Whole Grain Couscous
1 1/2 cups warm water
1/2 tsp salt
1 tomato, chopped
1/2 cup petite carrots, chopped
1 bunch parsley, copped
1 Lemon, zest and juice
3 tbs Olive oil
1/4 cup Sun-flower seeds
1/2 tsp salt, to taste
Method:
Pour water over couscous, rest 15 minutes, chop ingredients, place together, mix.

Hummus
Ingredients:
1 can garbanzo beans, drained
1/4 cup Tahini, sesame paste
1 lemon, juiced
1 tbls olive oil
1/2 tsp salt
Pita bread
Optional: Sliced cucumbers & tomatoes, substitute pre-made hummus
Method:
Place garbanzo beans in food processor, add lemon juice and zest, add tahini, add salt.
Process till smooth.

Salad
1/2 a package 22oz frozen ready cooked chicken strips(or grill your own)2 cups
1 apple, diced small
1/4 cup almonds, sliced or slivered 
3 tbs raisins
1/2 cup grapes, sliced in quarters or half
1 whole grain wrap or substitute 5 oz salad greens
Method:
Mix dressing ingredients and set aside in large bowl to bloom flavors.
Mix apple, chicken, raisins, almonds, and grapes together with dressing.
Serve over greens or in a wrap.

Caribbean Chicken Salad Wrap
Ingredients:
Dressing
1/4 cup healthy choice mayonnaise
2 tbs honey
1 lime, juiced
1 tbs curry powder
To taste salt

 
Sandwich with a KICK!
Ingredients:
Thin Whole wheat bread
Sliced honey ham
Sliced Cheddar cheese
Mayo
Penzey's Sandwich Sprinkle
Method:
Assemble... place in lunch box

Salad:
5oz or half a bag hearts of romaine
Any combination of ingredients below:
1 tbs black olives, sliced
2 tbs feta cheese, crumbled
1/4 whole cucumber, seeded
1 baby sweet bell pepper or green pepper
1/2 tomato  or a handful of cherry tomatoes
2 tbs garbanzo beans
1 ea 5 oz. grilled chicken breast 
1 crunched up bagel pretzel or pita chips

Greek Box Lunch Salad
Ingredients:
Dressing:
1/2 tsp honey
2 tbs balsamic vinegar
2 tsp water
1 tbs olive oil
1/4 tsp salt
To taste ground pepper
1/2 tsp Penzey's sandwich sprinkle
Method:
Place ingredients in small covered container and shake before mixing with salad.
