Summer peach Crème Brule

3 cups heavy cream
1cup sugar
8 yolks
2 tablespoons peach schnapps
2 peaches puree

Take the egg yolks, and half the sugar and mix then set aside.
In a sauce pan bring to a boil the heavy cream, vanilla and half the sugar. Once it comes to a boil temper the yolks into the cream and remove from the heat. Add the peaches and schnapps into the mixture. Strain the mix into a bowl and then pour them into your baking cups.
Bake at 325 in a water bath for 45 mins. Remove from the water bath and refrigerate for 1 hour.  Before serving sprinkle with sugar and cook the sugar for a thin crust of sugar.
Now it's time to serve.
