-Quick Baked Fillets of Fish 

Preheat oven 350 degrees

Place in a oven safe dish1 pound small skinned fish fillets in one layer

In a small sauce pan stir and heat 2/3 cup of any of the following condensed soups:

cream of tomato, celery, mushroom or asparagus

Adding 2 tablespoons of milk, a dash of cayenne pepper to your taste

Pour the sauce over the fish

Bake uncovered for 10 minutes and serve 

-Oven Fried Fish 

2 pounds fish fillets

1 1/2 teaspoons salt

1/4 teaspoon ground black pepper

milk

Seasoned flour (to your taste) or fine dry seasoned breadcrumbs

1/2 stick butter melted 

Preheat oven 500 degrees, placing the a oven rack at the very top 

Cut fish into serving size pieces

Combine milk and salt and pepper

Dip the fish into the milk, then roll into the flour or breadcrumbs

Place the fish in a well buttered baking dish, one layer

Pour the melted butter over the fish

Bake 10-12 minutes or fish flakes when tested with a fork
