-Rich Poultry Salad
Arrange thin slices of cooked/skinless chicken on a bed of lettuce
Mix together mayonnaise, grated horseradish, catsup, orange juice and a little spiced rum to your taste
Coat the chicken with the mayonnaise
Top with sliced hard cooked eggs, thin pineapple and tomato slices
-Frankfurter Salad
Thinly slice cooked frankfurters or Vienna sausages
Thinly slice and lightly salt cucumbers
Mix together Mayonnaise and french Dijon mustard to your taste
Combine all the ingredients
Serve on a bed of lettuce, garnish with sliced tomatoes
